Balsamic Pork with Wild Rice and Peaches

Matt made dinner last night, and it was super delicious.

Balsamic Pork with Wild Rice and Peaches

** serves 2**

For the pork:
4 pork loin chops
1/3 cup balsamic vinegar
1 large shallot, chopped
2 cloves garlic, minced
2 tsp fresh or dried rosemary, chopped
1 tsp sugar
1 tsp each of pepper and salt

For the peaches:
1 peach, halved
cooking spray

For the wild rice:
1 cup Texmati white/brown/wild rice mix (or any combination of wild and regular rice)
2 tsp chicken base
2 stalks green onion, chopped
2 Tbsp dried cranberries
2 Tbsp walnuts

Bring water and chicken base to a boil to cook the rice.

Cook the rice until done, and keep warm.

In the meantime, heat a pan with oil over medium heat and saute the shallot and garlic, until fragrant.

Add the balsamic vinegar, sugar, and rosemary and simmer until reduced to desired sauce thickness.

Meanwhile, sprinkle the pork with salt and pepper on both sides.  Heat a grill pan on medium-high and coat the pan with cooking spray.

Cook the pork about 2 minutes on each side and remove from the pan.

Pour the balsamic sauce over the pork, cover, and let rest while the peaches are grilled.

Spray the same grill pan with more oil and grill the peach halves, 1 minute on each side.  Cut the halves in half.

 Stir in the green onions, cranberries and walnuts into the rice.  Serve all together.
