Potato, Spinach and Ham Frittata

Basically a frittata is just a fancy word for a giant-a** omelet.


 10 eggs
1/4 cup milk (I used almond milk)
2 ears (or 2 cups) of corn
1/2 cup frozen spinach, thawed and drained
3-4 sliced of deli ham, chopped
3-4 slices of deli cheese, chopped
3 potatoes, peeled, sliced into 1/4″ rounds and roasted at 375 for 20 minutes
1/4 of an onion, sliced and carmelized in a pan
salt, white pepper, thyme, chopped garlic – any spices you’d like.

Preheat the oven to 375.  (Or just leave it on from roasting the potatoes).

Add all the ingredients (except the eggs and milk) to a bowl.  Mix together.

Add all the eggs to a separate, larger bowl.  Remove 4 of the yolks with a spoon.

Add the milk and whisk the eggs until frothy.

Mix the add-ins to the egg mixture.

Add the spices and mix.

Heat an oiled cast-iron skillet over medium heat.

Add the egg mixture and stir until the egg mixture starts to cook a little (about 5 minutes).

Transfer to the oven, covered, for about 30 minutes.

Remove foil from skillet and cook another 10 minutes.



Oven Hot Dogs

I didn’t like these.  Because I don’t like hot dogs. They remind me of when I was a kid and would puke them up due to a sensitive stomach.  Oh, memories.

But Matt loved these oven hot dogs (he rated them a 10 on a 1-10 scale) and so I’ll keep this recipe for him.  Maybe I can substitute something in place of the hotdog….

Oven Hot Dogs

**Serves 4**

4 hotdogs
1 hotdog buns
leftover chili
mayo, mustard, sweet relish
4 Tbsp shredded cheddar cheese
chopped onion for garnish

Preheat the oven to 350 degrees.

Spread the buns with mayo and mustard.

Add in some relish and spread evenly.

Place the hotdogs in the buns, and arrange the buns on the pan (so that they are kinda squished, like in the picture).

Top each with chili, cheese, and onion.

Bake, covered with foil, for 45 minutes.

Scoop out individually with a spatula and serve to your chili-dog-lovin’ boyfriend.

Whole Grain Cauliflower Mac and Cheese

Cauliflower Mac and Cheese

Maybe the photo was not worth posting, but the recipe definitely is.

1/2 box whole grain mini shell pasta
1 8oz. bag (low fat) shredded cheddar cheese
1 pint low fat sour cream
1/2 head cauliflower, cut into small pieces

Preheat oven to 350 degrees.

Boil the pasta until almost al dente.

Spray a large casserole dish with PAM to prevent sticking.

Meanwhile in a bowl, mix together the cheese, sour cream, and peas.

When the pasta is done, mix together with the cauliflower and cheese mixture the casserole dish.

Cover with foil and bake until melted.
