Toasty Crackers

As a college student I’m not about to shell out $3-4 for a box of crackers that, frankly, I’ll eat in about 2 days.  This is a healthy, homemade, cheap, and delicious recipe to make your own.  They would be great for topping soups with, for dipping, packed into a lunch, or just as a snack for a busy day.

Toasty Crackers

 1 1/4 cup warm water
1 Tbsp sugar
2 tsp bread machine yeast
2 1/2 cups unbleached all-purpose flour
1 cup whole wheat flour
1 tsp salt
2 Tbsp flax meal
2 Tbsp oil (next time I’ll try coconut oil!)

(For bread machine):

Add in the warm water, sugar and sprinkle yeast on top.  Let sit for 10 minutes.

Next, add in the all purpose flour, wheat flour, flax meal, salt and oil.

Put the machine on “dough” setting.

(By hand):

(I haven’t tried this by hand yet, so I can’t completely vouch for it.  But I’ll update this post once I have tried it).

Add the water, sugar and yeast to a bowl.  Let sit for 10 minutes.

In another bowl add the flours, flax meal and salt.

Mix the oil in with the yeast mixture.  Pour this mixture into a well in the dry mixture bowl.

Stir until incorporated.

Knead by hand for 15 minutes and let rise in a warm place for about an hour.

Once the dough is made and has risen (by either the bread machine or by hand), preheat an oven to 375 degrees.  Roll the dough out using a floured surface and a rolling pin.  Roll it out as thin as possible.  *the dough is slightly sticky so add small amounts of flour as you need to.

Using a pizza cutter, slice the dough into squares of desired size.

Line a baking sheet with parchment paper.

Place the cut squares onto the sheet.

Spray or brush the squares with olive oil and sprinkle with seasonings (sesame seeds, italian seasonings, cajun seasoning, anything you’d like).

Spinkle the squares with salt (optional).

Bake for 15-20 minutes, or until browned slightly on the edges.
