Chewy Peanut Butter Cookies, Gluten-Free

Adapted from Peaches and Donuts

1 cup peanut butter
3/4 cup brown sugar (I used dark brown)
1 egg
1 tsp baking soda

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

In a bowl stir together the peanut butter and sugar.

Using a hand mixer, beat in the egg until fluffy.

Mix in the baking soda.

Place on the baking sheet in round teaspoon-fulls.

This is down to a science:
For chewy cookies (the way PB cookies should be!!) bake for 6 minutes.
Then take out of the oven, flatten with a fork, and bake another 5 minutes.

Let rest on the cookie sheet for 5 minutes, then transfer to a cooling rack (or your mouth).

    Wow! Only four ingredients and I have all of these most of the time. This sounds like the perfect little snack to make any time:)
