Homeade Pie Crust

**makes a double batch for a single crusted pie (bottom only), single batch for double crusted pie (top and bottom)**

3 1/2 cups all-purpose flour
2 sticks of butter
5 Tbsp ice cold water
2 egg yolks
2 Tbsp lemon juice
1 tsp salt

Place the butter in the freezer for 15 minutes.

Meanwhile, sift the flour into a large mixing bowl.

Whisk together the water, eggs and lemon juice and salt in a smaller bowl.  Place in the fridge.

Take the butter out of the freezer and cut into half-inch cubes.  Add to the flour.

Beat the flour and butter together  for about a minute.

Lower the setting to “mix” and drizzle in the egg/water mixture from the fridge.

Beat for 30 seconds.

On a floured surface, divide the dough in half, wrap each with plastic wrap and chill for 2-4 hours before use.  The other half can be frozen until next use.

    This sounds like a very easy recipe to follow… I’ve had “hit and miss” luck making pie crust… thanks for sharing!
