Bad Day Vegan Chocolate Cookies

There are many benefits to eating and baking vegan, but do you know what the best part is?  Being able to safely eat as much cookie dough batter you want.

Recipe from Lemonpi

1 cup vegetable oil
1 cup sugar
1/3 cup unsweetened apple sauce
1/2 cup cocoa powder
1 tsp salt
1 tsp vanilla extract
1 cup plain flour
1/2 cup whole wheat flour
1 tsp baking soda
1 cup dark chocolate chips

In a large bowl combine the wet ingredients (oil, applesauce, vanilla) and the sugar, cocoa powder, and salt.  Mix together.

Add in the rest of the ingredients and mix, using a spoon.  Lick it when the mixing is done.

Refrigerate the dough that is left over from “Taste testing”, for at least 15 minutes.

Meanwhile, preheat the oven to 325 degrees.

After 15 minutes, spoon the dough in balls on a parchment-lined baking sheet, and bake for about 15 minutes.
