Flax Waffles – Chocolate and Reg.

Today is going to be good.  We are going out to look for a dog to adopt, and so the morning should start off right — with waffles! Matt got me a waffle-maker, and since I couldn’t wait to try it I decided to make waffles two ways.  I wonder if there are any doggie-friendly waffle recipes out there?  0: )

Flax Waffles

 My favorite were, of course, the chocolate ones! : )

**Serves 2**

2 eggs
1 cup flour
2 Tbsp oil
1 1/2 tsp baking powder
3 Tbsp sugar
2 Tbsp flax meal (or ground flax seed)
1/2 tsp salt
(if making the chocolate ones, add 2 Tbsp cocoa powder!)

Preheat your waffle iron.

In a bowl, whisk together the eggs, milk and oil.

Add in the dry ingredients and stir until smooth.

Add the batter and cook according to the directions of your machine.

Serve topped with fruit and whipped cream or just plain ol’ maple syrup and butter.

*Our machine made about 4-5 small waffles which was perfect for the two of us.
