Breakfast Baked Potatoes

This was weird and oddly yummy.

Breakfast Baked Potato

**Serves 2**

2 baked potatoes, hollowed out
3 eggs
2 Tbsp milk (Almond milk)
2 cloves garlic
1 chopped shallot (optional)
salt and pepper
shredded cheese and scallions (optional)

Preheat an oven to 375 degrees.

In a large measuring cup whisk together the eggs, milk, garlic, salt, pepper, and as many scallions / as much cheese as you’d like.

Pour the mixture evenly between the two potatoes (should be filled to the rim).

Bake for 30-40 minutes, or until firm.

Best when served with ketchup and hot sauce!

    Well I’ve never had, or even considered having, a baked potato for breakfast… I want to now.
