Vegetarian Black Bean Burgers

These are so, so good.  Like, “even though I’m not a vegetarian I’d rather have these than regular burgers”  kind of good.

I eat mine on a toasted hamburger bun with coleslaw on the bottom, melted cheese on top, and with onions, ketchup and mayo.  I could barely contain myself long enough to take a photo.

Vegetarian Black Bean Burger

This recipe is vegetarian but can me made vegan.  Just leave out the egg (or use substitute).  The recipe will work without egg, it just helps as a binder.

**Makes about 6 burgers**

Ingredients:
1 can of  black beans, rinsed and drained
1  1/2 cups finely diced zucchini
1 medium potato, peeled, boiled & chopped
1/2  large onion, finely diced
1 egg (optional, but helps hold the burger together)
2 Tbsp garlic powder or 1 Tbsp minced fresh garlic
1 tsp cumin
1  1/2 Tbsp chili powder
1/2 tsp jalepeno powder or cayenne powder
1/4 cup bread crumbs
salt and pepper
buns and burger toppings

Boil the potato until soft enough to mash.

In the meantime, preheat the oven to 425 degrees.

While the potato is still boiling, heat a skillet with a little bit of oil and saute the onion and garlic powder, until translucent.

Add in the zucchini and cook until the water evaporates, or about 6-7 minutes.

When potatoes are done, drain and let cool in the colander.

To the zucchini and onions, add the black beans, salt to taste, chili powder, jalepeno powder (or cayenne) and cumin.

Note:  do not skimp on the seasonings.  They are what make this burger great!

Remove from the heat and mash the bean/onion/zucchini mixture.  Mash it well.

Then, add in the potatoes and mash those into the bean mixture.

When everything is mashed, stir in the breadcrumbs and egg.

Form burgers and place on a sprayed oven sheet.

Bake in the oven for about 10 minutes, until crisp on the outside.

Note:  Right after removing them from the oven I placed a slice of cheese on the burger and covered with a pot to let the cheese melt.  Sooo good!
