Cauliflower Mac and Cheese

Maybe the photo was not worth posting, but the recipe definitely is.

1/2 box whole grain mini shell pasta
1 8oz. bag (low fat) shredded cheddar cheese
1 pint low fat sour cream
1/2 head cauliflower, cut into small pieces
peas

Preheat oven to 350 degrees.

Boil the pasta until almost al dente.

Spray a large casserole dish with PAM to prevent sticking.

Meanwhile in a bowl, mix together the cheese, sour cream, and peas.

When the pasta is done, mix together with the cauliflower and cheese mixture the casserole dish.

Cover with foil and bake until melted.

This recipe provides:  manganese, calcium, vitamin C, vitamin K
