Scrambled Egg Cups

**Make about 2 per person**

sliced bread
eggs
shredded cheddar or slices, chopped finely
green onion or spinach, or herbs
garlic powder
salt and pepper
chopped onion
bacon bits, if avaliable

Preheat the oven to 350 degrees.

In the meantime, lightly mist a cupcake pan with Pam.  Place the bread slices into the pan.

In a bowl, whisk together the eggs and all other ingredients.

Pour this into the bread slices.

Top with some salt and pepper.

When oven is ready, place the pan inside and cook for about 5-7 minutes.

Take out, and loosely place foil on top of the cups.

Bake for another ~15 minutes, until cooked through.

This recipe provides:  selenium, phosphorus, riboflavin, vitamin B12
